Even without sugar, fruitcake still sweet

Ethelene Hale wanted a recipe for diabetic fruitcake and Arlene Tracht is happy to oblige. It's a bit of work to prepare some of the ingredients but well worth it. Deborah Griswold shares a recipe for sugarless fruitcake made with your favorite artificial sweetener. Deborah got the recipe from allrecipes.com and says it is very moist. Dessert Diabetic Fruitcake For: Ethelene Hale of Brooksville From: Arlene Tracht of Tarpon Springs 1/2 cup snipped dried figs 1/2 cup chopped dates 1/2 cup chopped prunes 1 cup crushed pineapple 1 cup dark raisins 2 cups chopped apple 1/2 cup chopped walnuts 1/2 cup orange juice 2 cups whole wheat flour 1/2 cup wheat germ, toasted 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 2 eggs - Combine figs, dates, prunes, pineapple, raisins, apple, walnuts and orange juice in a bowl....

Make this the night before, cover and keep in the refrigerator, then bake it for breakfast. CSEA Cookbook A Recipe for Relief

ALBANY, NY -- (11/22/2006; 1050)(EIS) -- CSEA, New York's Leading Union, has cooked up a way to help New Yorkers build their recipe collection while helping victims of last year's gulf coast hurricanes rebuild their lives. In time for the holidays, the union has released the CSEA Cooks From the Heart cookbook. The cookbook contains hundreds of favorite recipes contributed by CSEA members and staff, including appetizers, main dishes, breads, desserts and diabetic recipes. Proceeds from the cookbook will help build "CSEA Street" a street of homes in Louisiana through Habitat for Humanity's vital rebuilding initiative, Operation Home Delivery. CSEA President Danny Donohue said the book is just one of many ways CSEA members have generously responded to hurricane rebuilding efforts in the Gulf Coast region....

Delayed Healing Associated With Smoking In Mice

Two new studies, funded by the National Institutes of Health and the National Football League Charities, examined the effects of smoking on fractures and ligament healing in mice and found that healing of both types of injury was delayed. The studies are published in the December 2006 issue of the Journal of Orthopaedic Research, the official journal of the Orthopaedic Research Society. Led by Hossam B. El-Zawawy of the Washington University School of Medicine in St. Louis, MO the first study involved 35 mice divided into a smoking group, which was exposed to cigarette smoke 6 days per week for a month, and a control group. Surgery was performed on all the mice to achieve a simple fracture. Researchers used type II collagen expression as a marker of cartilage formation (chondrogenesis) during healing....

NEW PORT RICHEY - Judy Canter's penchant for cooking could have meant the end of her relationship with her new husband, Jim. He said he liked pierogies, so she made the stuffed dumplings, unaware of what the starchy delicacy would do to his blood sugar level. Learning about his diabetes - and how to cook foods that keep his blood sugar levels within the healthy range - became Canter's new passion. She began scouring the Internet, books, magazines and any other resources she could find for cooking techniques, carbohydrate information and healthful recipes. Dear Dr. Gott: Our daughter, in her mid-50s, is plagued by "burning feet." It's so painful that it causes insomnia. She can walk for only 15 minutes without pain, so exercise is too painful. She is at least 60 pounds overweight and an addicted smoker. She has seen doctors, including a podiatrist and a neurologist, and has been diagnosed with Morton's neuroma on the bottoms of her feet. She is debating the removal of the inflamed nerves. Dear Reader: Your daughter -- who appears to be a candidate for serious vascular consequences secondary to her weight and smoking -- may be helped by surgery, but I doubt that a complete recovery is likely until she addresses all of her health problems. She should also be examined by a vascular specialist before she has foot surgery....

Free diabetes screenings, open house offered

Global Medical Direct, a Lenexa-based provider of diabetes supplies, will have an open house for diabetes screenings and education from 9 a.m. to 1 p.m. Saturday. The event, "At Ease with Diabetes," will include free screenings for blood glucose, cholesterol and blood pressure, and fittings for diabetic shoes. There also will be free upgrades for blood glucose monitors and free flu shots for persons with diabetes who are on Medicare or Medicaid. Flu shots will be available to others for $20. Also included will be free consultations with a registered dietitian and free recipes for meals designed to maintain healthy glucose levels. Program aiming to educate diabetics

SIKESTON ? Scott County diabetics or residents who just want to live a healthier life could benefit from a free program aimed at helping people make better food choices. Beginning tonight the University of Missouri Extension and Scott County Health Department is offering ?Eat Well, Be Well With Diabetes? ? a series of classes for people who have diabetes and their family and friends. The four-session class is an updated version of MU Extension?s ?Dining with Diabetes? series, which has been offered over the past couple years. It?s designed to teach people with diabetes about healthy food choices and meal planning. ?It?s the same program we?ve had in the past. A lot of the same things we?ve done before, but there a few different components,? said Brenda Freed, public educator for Scott County Health Department....

Diabetic diets to be discussed

PEORIA - People with diabetes, as well as those who care for them, can learn about healthful shopping, cooking and menu planning during a three-part series of informational meetings that start today. Eating Well With Diabetes, sponsored by the University of Illinois Extension of Peoria County, will hold the meetings at the extension's Peoria office, 4810 N. Sheridan Road, from 1 to 3 p.m. and from 6 to 8 p.m. today, Nov. 8 and Nov. 15. Those attending will learn more about shopping for food, eating away from home and menu planning with diabetes. Also included will be some cooking demonstrations and tasting of different foods and recipes. Registration will be $15 for individuals, $20 for a couple. The sessions include class materials, recipe booklets and taste testing, organizers said....
